Anda Khagina Roll

Ingredients for Anda Khagina:
Oil 3 tbsp
Onion (chopped) 1 ½ cup
Tomatoes (chopped) 1 cup
Red chili powder 1 tsp
Salt 1 tsp
Black pepper powder 1/2 tsp
Turmeric powder 1/2 tsp
Garam masala powder 1/2 tsp
Eggs 12
Green coriander (chopped) 1 cup

Ingredients for Sauce:
Mayonnaise 1 cup
Ketchup 1/2 cup
Black pepper (crushed) 1/2 tsp
Salt 1/2 tsp
Garlic powder 1/2 tsp

Ingredients for Assembling:
Paratha as required
Prepared anda khagina as required
Prepared sauce as required

Directions for Anda Khagina Preparation:
In a pan, heat oil and add onion. Cook until it gets translucent. Add tomatoes and cook until tomatoes get soft.
Add red chili powder, salt, turmeric powder, black pepper powder, garam masala powder and cook for 2-3 mins.
Add eggs and cook until fully done. Add green coriander and mix it well. Set aside.
Directions for Sauce Preparation:
In a bowl add mayo, ketchup, black pepper crushed, salt, garlic powder and mix it well. Set aside.
Directions for Assembling:
Take the paratha, spread sauce on it and add anda khagina. Make a roll shape and serve.
Your Anda Khagina Roll is ready.
