Sneaky Guacamole
Total time: 25 minutes
Yield: 2 cups
4-6 servings
Ingredients:
• 1 medium zucchini
• 2 teaspoons canola oil
• 2 ripe avocados, cubed
• 1/4 cup chopped cilantro
• 1/4 cup minced red onion
• 1 Jalapeño, seeded and minced
• 1 garlic clove, minced
• Juice of 1 lime
• 1/2 teaspoon salt
Instructions:
Step 1: Cut off the ends of the zucchini and cut vertically into 1/4 inch thick slices. Heat oil in large
nonstick skillet over medium high. Cook zucchini until well browned, approximately 3-4
minutes per side. Place zucchini on a plate lined with a paper towel to cool for 10 minutes.
Step 2: Meanwhile, place remaining ingredients in a medium bowl. Once cooled, chop the zucchini and add to the bowl. Use a potato masher or fork to mash the ingredients. Serve immediately or
cover well and refrigerate for up to 1 day.
