Garden Fresh Tomato Sauce

(I tripled this recipe so adjust according to what you have.)

3 cups of cherry tomatoes
1/2 a cup of olive oil
S & P
1 medium onion, sliced
4 cloves of garlic minced
1 1/2 teaspoons of oregano
2 bay leaves
1/2 tsp. of crushed red pepper

Place whole cherry tomatoes on a large baking sheet without overlapping. Drizzle with about a quarter cup of olive oil, and season with salt and pepper to taste. Bake it 400°F for 45 minutes.

In a large Dutch oven or heavy pot add remaining oil. When oil is hot add in the onions and garlic, sauté until softened and fragrant, but not browned. Add in the oregano, red pepper flakes, roasted cherry tomatoes, and bay leaves. Cook on low heat for 15 to 20 minutes. Taste the sauce and adjust seasoning if needed..

Remove bay leaves.

Either transfer to a blender or use a an immersion blender until the sauce is creamy.

Transfer to a jar/jars and refrigerate for up to a week.
