We start by gently simmering marinated chicken in a blend of coconut cream and water to create a luscious base, then gradually build a flavourful sofrito with caramelised onions, ginger, garlic, and aromatic spices such as garam masala, cumin, coriander, and Kashmiri chilli powder. This slow-cooked sauce, enhanced by a concentrated tomato purée and finished with a dash of optional fenugreek leaves, offers a complex balance of tang, sweetness, and warm spice, perfectly complementing the tender chicken.
