
Anti-Anxiety Parfait Bowl

Chia Seed and Almond Granola
Active Time: 6 minutes
Bake Time: 24 minutes
Total Time: 30 minutes (plus additional 45 minutes cooling time)
Total yield: 4 1/2 cups
Ingredients
1/4 cup maple syrup
1/4 cup melted coconut oil
1/2 teaspoon almond extract
1/4 teaspoon Kosher salt
2 cups rolled oats
1 cup sliced almonds
1/4 cup chia seeds
Instructions
Step 1
Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
Step 2
Combine maple syrup, coconut oil, almond extract and salt in a large bowl. Stir in oats, sliced almonds and chia seeds. Spread mixture onto the prepared pan in a packed even layer approximately 1/8” thick.
Step 3
Bake the granola until golden, 22 to 25 minutes. Place the pan on a wire rack to cool for at least 45 minutes.
Step 4
Once the granola is completely cool, break into chunks and store in an airtight container for up to 2 weeks.
