Chicken Yakhni Pulao

Ingredients for Chicken Stock:
Chicken 1 kg
Onion (cubes) 1 cup
Cumin seeds 1 tbsp
Garlic cloves 3-4
Coriander seeds 1 tbsp
Black peppercorns 1 tbsp
Green cardamom 4-5
Cinnamon stick 1-2
Black cardamom 2-3
Cloves 4-5
Salt 1 tbsp
Ginger pods 2-3
Water 8 cups

Ingredients for Chicken Yakhni Pulao:
Oil 3 tbsp
Onion (sliced) 1 cup
Black peppercorns 1 tbsp
Cumin seeds 1 tbsp
Black cardamom 2-3
Green cardamom 2-3
Reserved chicken
Yogurt 1 cup
Red chili flakes 1 tbsp
Salt 1 tbsp
Coriander powder 1 tbsp
Green chilies 5-6
Chicken stock 5 cups
Soaked rice 3 cups
Brown rice (for garnishing) as required

Directions for Chicken Stock Preparation:
In a pot, heat chicken, onion, cumin seeds, garlic cloves, coriander seeds, black peppercorns, green cardamom, cinnamon stick, black cardamom, cloves, salt, ginger pods, water and cook for 15-20 mins.
Reserve the chicken and the stock separately for later use.
Directions for Chicken Yakhni Pulao Preparation:
In a pot heat oil and add onion. Cook until light brown.
Add black peppercorns, cumin seeds, black cardamom, green cardamom and cook for 1-2 mins.
Add reserved chicken and mix it well. Add yogurt, red chili flakes, salt, coriander powder and cook until chicken is fully done.
Add green chilies and cook for 2-3 mins.
Add chicken stock and cook until it starts to boil.
Add soaked rice and cook until 80% water dries out.
Cover and steam over low flame for 10-12 mins.
Dish it out and garnish it with brown onion. Your Chicken Yakhni Pulao is ready.

Cooking time: 40 mins
